NO MATTER THE WEATHER, SPANISH FOOD IS FULL OF SUNSHINE. ENJOY THE FLOW WITH A MENU THAT MOVES FROM SNACKS TO SIT-DOWN DELIGHTS.

Ah Spain, land of long lunches, late nights and humble but heartwarming recipes. I love the bold flavours (think tomatoes, pork and paprika), the absence of fuss and the warm, colourful mood. You just know you’re going to be smiling as you eat this food.

Spanish food is all about easy vibrancy and social flow, so go with earthy tones and relaxed vibes.

  • SUNNY GAZPACHO
    Gazpacho is a cold soup, normally made with ripe red tomatoes. Yellow tomatoes put a new, sunshiny spin on the classic. Turn this appetiser into a larger entrée by serving it with barbecued prawn cutlets and a chopped salad of yellow tomatoes, capsicum, cucumber and onion.
  • PEAS AND JAMÓN
    Peas and jamón (ham) are a classic Spanish combination and this dish shows why. The sweet starchiness of the peas (and their broad bean cousins) contrasts with the salty punch of the meat. The cut-through of the cheese and sherry ensure this dish is as balanced as it is comforting.
  • STEAMED ORANGE PUDDINGS WITH ALMOND MILK ICE CREAM
    The gentle flavour and texture of these puddings round off a Spanish meal with sophistication. They’re even better made with homemade Almond milk (see Tips). Ensure ramekins fit comfortably into the Varoma dish so that the lid closes securely and steam can circulate freely.
  • CHORIZO AND PRAWN A LA SIDRA
    Dishes that combine cured pork and seafood are very popular in Spain, so this simple snack of chorizo and prawns is part of a grand tradition. The smoky, spicy sausage and the sweet shellfish are simmered in apple cider then piled on crusty bread.
  • HERB-SALTED CHICKEN AND CHICKPEA CASSEROLE
    Chicken pieces are seasoned with thyme salt before being steamed over a flavoursome casserole thickened with hazelnuts and sourdough bread. A little hint of sherry vinegar – a key Spanish ingredient – brings all the other flavours into focus. Serve it as part of a Spanish banquet or an easy meal at any time.
  • TUNA EMPANADAS
    Trust the Spanish to have the verb ‘empanar’ or ‘to wrap in bread’! These little parcels are filled with a rich and zesty mix of tuna and tomatoes and there’s a smoky salsa to take them up a notch.

When planning the table setting, think about rusty reds that echo the chorizo and smoked paprika threaded through this menu. You might even plunder the nearest op shop for terracotta serving dishes.

Mix and match these dishes with the Mexican chapter, which has simpatico flavours and mood.
